November with the Betancourts

I have no idea where November went. I believe it may have topped the list for “Busiest Month of 2010″ at our house. The first half of it was consumed by church finances and Thanksgiving ate up (pun intended) the rest!

As the financial secretary of our church, I had the pleasure of helping sort out about a year’s worth of improper book-keeping (woo hoo) which took the church treasurer and me about two weeks to accomplish. In that time, maintaining good sleep and healthy eating habits were hopeless pursuits! I had no energy to keep up with meal plans, schedules, or housework. I felt as though I had abandoned my family as I huddled over my computer in a tiny room at church trying to make sense of some very mixed-up numbers. Don’t even ask me where I found the time or motivation to keep blog posts up those two weeks because I don’t even know!

The good news is that we were able to present a mostly accurate year-to-date budget to the church so that we can work on a new budget for next year! It’s always nice to see your hard work pay off, isn’t it?

Thanksgiving in Nebraska

We decided to spend Thanksgiving with my husband’s side of the family this year after not seeing them for about six months. It was nice to be able to see family again, to eat a lot, and to relax after having such a grueling start to the month! We were able to spend one last holiday at Grandma Frances’ house before she moves in with my in-laws, so that was somewhat bittersweet. It made me think of the first few times that I went with Jonathan and his parents to visit her when we were dating…such happy memories!

Our plans went somewhat awry when we discovered some problems with our car on Sunday (the day we were originally planning to come home) but praise the Lord they became apparent before we embarked on the 7-hour drive home! The car repairs were finished Monday night, so we left Tuesday morning with plans to drive three hours, stop in Kansas to take a break at my mom’s house and let Noah out of his car-seat for a bit, and then head the rest of the way home.

Sometimes I wonder why we even make plans!

We ended up stopping in Topeka after almost an hour of Noah screaming in the back of the car. We were all exhausted and I had a headache, so we stayed a longer than we had planned (there’s that “p” word again). I ended up with a horribly sore throat and was miserable all afternoon. Eventually we decided to just stay the night there and my sore throat evolved into a head cold.

Despite somewhat unpleasant conditions and the short length of our stay, we did have a nice visit with my side of the family. We also regained a little energy to finally complete our trip home.

Happy at Home

Needless to say, I am very happy to be home and to try to get back in the swing of things! We are already eating a little better than we did the last week or so and I’m hoping it will help us to be more healthy and energized once again!

And speaking of food, keep an eye out on Mondays starting next week as I will begin posting our weekly menu plan and linking to OrgJunkie’s weekly Menu Plan Monday! I’m excited to give you an extra little peek into our lives and also have accountability so that I will actually keep up with a regular menu plan! So check back here on Monday for next week’s menu plan and…

Happy December!!! :)

This whole year has been busy for us. Now that my kids are a bit older, and I have cut back my hours at my out of house job, it has left us lots of time to socialize and have fun. I have been busier than I like at times, but it has been good for all of us. Happy December to you and your family.
