Menu Plan Monday

So after three months of silence, BEHOLD: a new post! And what better way to celebrate than with tidings of food? This post is linked to Menu Plan Monday over at Orgjunkie, so be sure to click on the picture above to go see all of the wonderful ladies over there and their menu plans for this week as well!

This week I am using an already cut-up local cage-free chicken and stretching it through all of my chicken recipes this week. Normally, I would throw a whole chicken in the crock-pot on Monday and then use the meat from that for recipes, but I decided to mix it up a little this time around! (If you don’t already buy local cage-free chickens, I highly recommend trying it! It tastes so much better and is so much better for you! At the very least you could look for Smart Chickens – it’s not local but it’s healthier and 100% chicken!)

Breakfast/Snack Choices: Cinnamon and Raisin Soaked Muffins (from Wardeh over at Gnowfglins) from the freezer, homemade yogurt (made in the crockpot!!!), homemade granola, and fruit

Lunch Options: Leftovers!!!

Dinners

MondayFried Chicken w/ Potatoes and Veggies [To-Do: Thaw Chicken]

Tuesday – Mexican Chicken Soup     [To-Do: Soak rice, chop veggies]

Wednesday – Fellowship Meal at Church

Thursday – Dinner out with friends

Friday – Homemade Pizza (with Valentino’s Pizza Crust made with whole wheat pastry flour)     [To-Do: Make crust and prep toppings]

Saturday – Chicken Fried Rice

Sunday – Pasta with Homemade Meat Sauce [To-Do: Thaw meat]

I’m SUPER excited because I’ve started buying raw milk and, along with the yogurt I made last week from it, I also have the cream culturing in the fridge to try this recipe for cultured butter! I can’t wait to try it and tell you about it!!!

    Welcome back! I usually menu plan on Thursdays, and it is almost time for me to dig out my crock pot for summer weather use.
